Rosemary Shortbread Cookies

Ingredients:
2 cups all-purpose flour
3/4 tsp salt
1/2 tsp baking powder
1 tbsp chopped fresh rosemary
3/4 cup butter
2 tbsp honey
1/2 cup confectioners sugar
Directions:
1. Preheat oven to 300 degrees.
2. Combine flour, salt, baking powder, and rosemary in a bowl.
3. Mix in electric mixer at low speed the butter, honey and sugar.
4. Add flour mixture and mix until dough resembles coarse meal. Small butter lumps are okay. Gather into a ball and transfer to a lightly floured surface. Knead until it just comes together about 8 times.
5. Halve dough and form each half into a 5-inch disc. Roll out each disc between two pieces of parchment paper into a 9 inch round.
6. Remove top sheet of parchment and place dough and bottom sheet on baking sheet. Score into 8 wedges by pricking with a fork. Tidy up edges with fork marks.
7. Place a sprig of rosemary on each piece and sprinkle with granulated sugar.
8. Bake in middle of oven until goden brown, 20-25 minutes.
Notes:
You can substitute lavender flowers for the rosemary if you wish.
