Pinquitos - Santa Maria Style

The Santa Maria Pinquito Bean comes from Santa Maria, California where it is known as a classic side dish bean.  The bean is small, hearty and pink with a dense and creamy consistency.   The beans can be difficult to find.   You may have to Google for the beans.
Ingredients:
3 cups dry pinquito beans
1/2 lb hamburger, uncooked
1/4 lb bacon, uncooked
1 medium onion, diced
3 cloves garlic, minced
1 envelope chili mix, Lawry's
4 cups tomato juice, approx.
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon oregano
Directions:
1. Wash and sort the beans.  Look for gravel. Soak overnight.
2. Drain the beans.  Add fresh water to cover an inch.  Cook at a simmer until almost tender, about 2 hours.
3. In a large skillet, cook hamburger until all red is gone.  Drain and discard fat.
4. To the hamburger, add the bacon, onion, and garlic.  Cook until soft.
5. Add the Chili Mix and 2 cups tomato juice.  Cook for 5  minutes and add to the beans.  Add more tomato juice if this is too dry.
6. Continue cooking until the beans are soft.  Add 2 teaspoons salt, 1/2 teaspoon oregano, 1/2 teaspoon pepper to taste.
Notes:
These taste better the next day, so make them a day ahead if you can.   Substitute Pinto beans, if necessary, but they are NOT the same!!!
