Shrimp Quesadilla


Ingredients:
2 cups shredded Pepper Jack cheese
1/3 cup fresh chopped cilantro
1 teaspoon chili powder
1/2 lb. chopped shrimp
8 (8-inch) flour tortillas
Directions:
1. In bowl, toss Pepper Jack cheese with the cilantro and chili powder.
2. Scatter the shrimp over the tortillas.
3. Top shrimp with cheese and tortillas.
4. Cook in hot, nonstick skillet over medium-high heat until golden brown on both sides, approximately 3 minutes.
