Guiltless Guacamole

Ingredients:
1 can (15-19 oz.) white kidney beans (cannellini), drained and rinsed
1 tablespoon lime juice or to taste
1 jalapeno chile, seeded
1/2 cup loosely packed fresh cilantro leaves
1/4 cup coarsely chopped sweet onion (such as Vidalia or Maui)
1/2 teaspoon salt
1 ripe avocado, pitted
Directions:
1. In a food processor, puree the beans and lime juice until smooth. Transfer to a medium bowl.
2. In the same processor, place the jalapeno chile, cilantro, onion, and salt; pulse until juicy and thick.
3. With a spoon, scoop the avocado from its peel into the bowl with the beans; mash with a fork until the mixture is blended, with some chunks remaining.
4. Stir onion mixture into the avocado mixture until blended. If you prefer a little more zip, stir in some additional lime juice to taste.
5. Guacamole is best served as soon as it's made, but you can also cover and refrigerate it for up to 1 hour. Serve with chips or veggies.
