Scallop & Pineapple Kabobs


Ingredients:
2 teaspoon finely shredded lime peel
1/4 cup lime juice
1/4 cup snipped fresh cilantro
2 small green and/or red jalapeno peppers, seeded & chopped
2 teaspoon sugar
1/3 cup canola oil
16 (about 1 1/2 lbs.) sea scallops
12 large fresh pineapple chunks
1 avocado, peeled, pitted, & cut into 8 chunks
Directions:
1. For dressing, combine lime peel & juice, cilantro, jalapeno, sugar, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Whisk in oil; set aside. Combine with scallops, pineapple, and avocado. Toss with 2 tablespoons of the dressing; reserve remaining. Marinate for 15 minutes; stirring often. Thread pieces on four 12-inch skewers.
2. Grill on a greased rack directly over a medium-high heat for 8 minutes, turning once halfway through grilling. Transfer to a platter. Serve with the remaining dressing.
Notes:
Serves 4. Each serving: 423 calories, 26 grams of fat (2 grams of saturated fat), 56 milligrams of cholesterol, 572 milligrams of sodium, 19 grams of carbohydrates, 4 grams of fiber, and 30 grams of protein. Daily Values: 11% of vitamin A, 66% of vitamin C, 6% of calcium, 6% of iron.
