Ginger Tilapia

               
Ingredients:
1/2 cup cider vinegar
1/4 cup packed brown sugar
2 teaspoon grated fresh ginger
2 medium cucumbers, sliced
4 4-oz. tilapia fillets, 1/2 - 3/4 inch thick
1 6 oz. carton of plain yogurt
2 tablespoon snipped fresh mint
Directions:
1. Preheat oven to broil.
2. In a medium bowl, stir together vinegar, brown sugar, ginger, and 1/4 teaspoon of salt until the sugar is dissolved; remove 1/4 cup. Add the cucumbers to the remaining vinegar mixture; toss.
3. Spray an unheated broiler pan with nonstick cooking spray. Arrange fish on the rack; brush with reserved vinegar mixture. Broil 4-6 minutes or until fish flakes easily.
4. In a bowl, combine the yogurt and mint. With a slotted spoon, add the cucumbers to plates. Top with the fish, yogurt, some lemon peel, if available, and ground black pepper.
Notes:
Serves 4. Each serving contains 210 calories, 3 grams fat (1 gram saturated fat), 59 milligrams cholesterol, 388 milligrams sodium, 23 grams carbohydrates, 26 grams protein. Daily values: 2% vitamin A, 8% vitamin C, 12% calcium, and 10% iron.
