Phad Se Yu

As you can see below, this recipe is definitely open to experimentation/interpretation. Passed onto me by my Oregonian friend, Nathan Hume.
Ingredients:
8 oz. tofu thinly sliced (or chicken or beef)
8 oz. rice noodles
2 tablespoon vegetable oil
1 cup broccoli
1/4 cup shredded carrots
1 tablespoon of fish and/or oyster sauce melted with brown sugar and soy sauce to taste

Marinade
1 clove garlic
1 egg beaten
1 tablespoon cornstarch, wine, fish and oyster sauce, and sugar
1 teaspoon sesame oil
1/2 teaspoon white pepper
Directions:
1. Mix together the fish/oyster sauce, brown sugar, soy sauce, broccoli, and carrots with the marinade.
2. Marinate for 15 minutes.
3. Cook the noodles until tender.
4. Add the vegetable oil to a skillet and stir fry the tofu until cooked to a desired firmness.
5. Add the noodles and remaining ingredients and continue to cook until the sauce has been somewhat reduced.
