Vegetable Curry

      
Ingredients:
vegetable oil
mustard seed
cumin seed
onion, potato, and 2 cups of sliced vegetables
ground red pepper
turmeric
garam masala
ground coriander
salt
tomato sauce
Directions:
1. Put a little vegetable oil in a skillet. When heated, add a pinch of dry mustard and cumin seed. Allow seeds to heat until they begin to pop.
2. Thinly slice onion and potato. Sauté in same skillet.
3. Add mixed sliced vegetables and continue to sauté.
4. Begin adding remaining spices, sprinkling 1/2 teaspoon of each (less of the red pepper if you do not like your food too spicy).
5. Once vegetables are lightly cooked and coated with spices (the mix will look yellow by now), add some tomato sauce and simmer a few minutes more.
Notes:
You can use shrimp or meat for some of the vegetable quantities or tofu when you're ready to sauté. This curry also works well as a soup base. (i.e. for curried black bean soup)
