Korean Seasoned Potatoes


Ingredients:
2 medium potatoes
2 tablespoons soy sauce
2 teaspoons sugar
1 teaspoon minced garlic
1-2 teaspoons sesame oil
2 teaspoons sesame seeds
4 tablespoons minced scallions
Directions:
1. Peel the potatoes and dice, placing in cold water to prevent browning.
2. Drain and place in saucepan with just enough water to barely cover the potatoes.
3. Bring water to a boil and cook potatoes until tender, about 3-4 minutes.
4. Meanwhile, in a bowl, combine the soy sauce, sugar, garlic, sesame seeds, sesame oil, and scallions.
5. Drain cooked potatoes well and add to the soy sauce mixture, tossing well.
6. Chill. Serve cold.
Notes:
In Korea, before the main dish is served, a variety of appetizers (such as these potatoes) are brought out in little bowls. Serves 4.
