Breakfast Enchiladas

Ingredients:
2 tsp vegetable oil
1 chopped onion
1 minced garlic clove
1/4 cup green and red pepper
2 cups finely chopped ham
8 flour tortillas
2 cups cheddar cheese
4 eggs
2 cups milk
1 tbsp all purpose flour
1/4 tsp hot pepper sauce or tobassco
Directions:
1. In skillet, heat oil over medium heat, cook onion, garlic, and peppers until soft ( 5 minutes )
Stir in ham
Place about 3 tbsp onto half half of each tortilla, sprinkle each with about 3 tbsp cheese
Roll up tightly and place seam down in greased 13x 9 inch baking dish
In bowl beat eggs blend in milk, flour, and hot pepper sauce. Pour over tortillas.
Cover and refrigerate overnight up to 12 hours.
Remove from frig 30 minutes
Spoon egg mixture over tortillas. Bake in 350 oven 50 minutes.
Sprinkle with remaining cheese.
