Japanese Gyoza Pot Stickers

Ingredients:
1 bok choy cabbage wilted with water in microwave then drained well
6 green onions
2 tsp. ginger root grated
1/2 lb. ground beef
1/2 lb. pork
2 Tb. cooking wine
2 Tbs. soy sauce
2 Tbs. sesame oil
1/2 tsp. black pepper
1 package dumpling or pot sticker wrappers
1 can chicken broth
Directions:
1. Chop cabbage fine, place in a bowl with water in microwave till wilted. Then when cool to touch, squeeze the cabbage well to get all the water out.
2. In a bowl mix cabbage, chopped green onions, and grated ginger, Mix ground beef, pork, wine, soy sauce, sesame oil and black pepper together with veggies and mix well.
3. Place a small amount of filling in the center of the wrapper. Then dip your finger in the chicken broth and smear it on half of the wrapper in order to seal the pastry. Then fold the wrapper in half sealing the filling. Then pleat the edges.
4. Put some sesame oil in a pan and heat on medium. Place the pot stickers in the skillet, and fry the bottom till golden brown.
5. Then, at the edge of the pan, pour in some chicken broth, up to 1/4 of the depth of the pot stickers. Cover, turn heat to low and simmer until chicken broth is gone. Serve with dipping sauce.
