Cannelloni

Ingredients:
2 Tbs. olive oil
1/4 cup finely chopped onions
1 tsp. finely chopped garlic
1 10 oz. frozen chopped spinach (defrosted, squeezed and chopped again) or 3/4 ob. fresh spinach cooked drained, and squeezed and finely chopped
2 Tbs. butter
1 lb. ground beef
2 chicken livers
5 Tbs. freshly grated parmesan cheese
2 Tbs. heavy cream
2 eggs beaten
1/2 tsp dried oregano
salt and pepper to taste
3 cups tomato sauce
4 Tbs. grated parmesan cheese
2 Tbs. butter cut into pieces
2 packages manicotti noodles
4 Tbs. butter
4 Tbs. flour
1 cup milk
1 cup heavy cream
1 tsp salt
1/8 tsp. white pepper
Directions:
1. Cook 2 packages of manicotti noodles.
2. Saute onions and garlic in olive oil. Stir in the spinach and cook for 3 to 4 minutes while stirring constantly. When all moisture is gone transfer to a large bowl.
3. Brown meat then add to spinach.
4. Brown chopped up liver for 3 to 4 minutes and add to spinach.
5. Add 5 Tbs. parm, 2 Tbs. cream, eggs, oregano to spinach and meat and mix well.
6. Fill pasta with spinach mixture. Put little film of tomato sauce in a 10x14 shallow baking dish. Layer Cannelloni side by side. Put tomato sauce over it and then pour white sauce over that. Sprinkle with parm cheese and dot with butter. Bake for 40 minutes covered and brown for 30 sex under broiler at 375 degrees.
7. For white sauce: In a heavy saucepan, melt butter over moderate heat. Remove from heat and stir in the flour. Then pour in milk and cream whisking constantly until flour is partially dissolved. Return to high heat stirring constantly. When boils, reduce and simmer for 2-3 minutes. Season with salt and pepper.

I have tested Canelloni from Jessica (made by her, not using the recipe) and I can say "delicious" !! Grande cuisine ! I'm French and we know how to cook canelloni, so you can trust her recipe ;-)
