1. Puree onion, garlic, celery and olive oil in blender if you don't want a chuncky sauce.
2. Saute onion, garlic and celery in olive oil until tender in a large pot. Add tomato paste and sugar. Cook stirring constantly until mixture begins to hold together and has a nice rich color, about 20-30 minutes.
3. Add water and cook this down until sauce slightly thickens. Add tomato puree and all seasonings. Cook over low heat at a simmer for an hour or more. Add water if gravy gets too thick during cooking. Stir during simmering. Taste and adjust seasoning as needed.
4. Add meatballs, put lid back on and cook slowly for another 30-60 minutes to meld the flavors. Serve over your favortia pasta.
