Thai Chicken Pizza

Not fast but delicious. Can use leftover chicken.
Ingredients:

Pizza Dough
1 cuo All purpose flour
1/2 cup Whole wheat flour
2 Tbsp. flax meal or ground flax
1 envelope Fleishman's Quick Rise yeast
1/2 tsp. salt
2/3 cup very warm water
2 tsp. olive oil
2 tsp. honey
olive oil or other cooking spray
1 Tbsp. Cornmeal

Peanut Sauce
1/4 cup light peanut butter
1/4 cup hoisin sauce
1 tsp. freshly squeezed lemon juice (or bottled)
2 tsp. toasted sesame seed oil
2 tsp. grated ginger root.
1 tsp. honey
1 tsp. soya sauce
1 tsp. red wine vinegar
1 tsp. finely minced garlic
As desired Red pepper flakes

For the PIzza
1 cup chopped cooked chicken
1 12 inch precooked thin pizza crust or prebaked homemade pizza crust
1 cup packed light shredded Montery Jack Cheese
1/3 cup bean sprouts
1/4 cup shredded carrots
1/4 cup chopped green onion
2 Tbsp. chopped roasted peanuts
1 Tbsp. minced cilantro
Directions:
1. Preheat oven to 425 degrees.
2. Pizza Dough, if making:
1) In medium bowl, combine both flours, flax meal, yeast and salt. Mix well.
2) Measure warm water in measuring cup; add in olive il, honey.
3) Pour the water mixture over the dry ingredients and use a wooden spoon to mix until mixture forms a ball.
4) Turn dough on slightly floured surface. Knead for 2 minutes. 5) Spray another medium bowl with olive oil and place the dough in it.
6) Cover with plastic wrap. Put in a warm place. Let rise till doubled. Spray 12" pizza pan and dust with cornmeal.
7) Turn risen dough out to lightly floured surface, roll to 12" round. Transfer to prepared pizza pan.
8) To prebake - prick crust and bake at 425 degrees for 6 minutes, then top and cook 8 to 10 minutes.
9) To bake from scratch - Add toppings and bake at 425 degrees for 15 minutes.


3. Peanut Sauce:
Combine all ingredients in a small saucepan until bubbly.  Let cool slightly.
4. Pizza Assembly:
1) Mix 1 heaping Tbsp. of sauce with the chicken pieces and set aside.
2) Spread remaining sauce over crust. Top with 1/2 of the shredded cheese. 
3) Distribute chicken pieces over cheese.
4) Top with bean sprouts, carrots, green onion and peanuts.
5) Sprinkelewith cheese over toppings.
Place pizza on middle oven rack and bake 10 - 12 minutes until cheese is melted. Sprinkle with cilantro.
