Pecan-Topped Honey Chicken

Ingredients:
3 Tbsp. honey mustard
1 tsp. lemon or lime juice
1/4 tsp. ground cumin
4 chicken thighs
1/2 cup pecans
1 Tbsp. plain dry bread crumbs
2 tsp. butter, melted
Directions:
1. 1. Mix mustard, lemon juice and cumin in small bowl.  Brush mixture over both sides of chicken.  Place chicken in shallow baking pan.

2. Mix pecans, bread crumbs, and melted butter.  Lightly press pecan mixture onto tops of chicken pieces.

3. Bake at 375 F for 20-25 minutes or until chicken is cooked through (160 F).
Notes:
Makes 4 servings
Prep time: 15 minutes
Bake: 25 minutes

SCD: omit bread crumbs
