Beef Stroganoff

Serves 6
Ingredients:
2½ lbs lean beef steak, cut in strips
½ cup butter
1¼ cup onions, chopped
2¼ cups fresh mushrooms, sliced
¾ cup tomato paste
2 cups beef stock (or 2 bouillon cubes in 2 c. boiling water)
2/3 cup sherry
salt and pepper, to taste
½ to 1 cup sour cream
1 clove garlic
noodles (or rice)
Directions:
1. Roll meat in flour, sauté in butter about 5 minutes or until brown. Place meat in hot baking dish. Sauté onions in same butter until tender. Place on beef. Add mushrooms.
2. Mix tomato paste, sherry, minced garlic, and salt and pepper to hot stock. Simmer 15 minutes. Pour over meat.
Bake 1½ hours at 350º, covered.

3. Let cool. Add sour cream when only warm.

4. Serve over cooked noodles or rice.
