Portobello Bruschetta
Ingredients:
2 tablespoons extra-virgin olive oil
4 cloves garlic, minced
4 (about 3/4 lb.) portobello mushroom caps cleaned, halved, and thinly sliced
sea salt and ground pepper
10 slices rustic white bread, toasted
1/3 cup fresh parsley, chopped
Directions:
1.
Heat olive oil in a large sauté pan over medium heat.
2.
Add garlic and sauté 30 seconds.
3.
Add mushrooms and cook until softened, about 5 minutes.
4.
Season with salt and pepper to taste.
5.
Divide mushrooms among bread slices.
6.
Sprinkle with parsley.
