Gary Danko's Leftover-Rice Cakes

From The Best Recipes in the World with Mark Bittman

Southwestern rice cakes made from leftover ingredients. Mark Bittman made them look so good on PBS my husband actually typed this up.
Ingredients:
3 cups mixed rice cooked
1/2 cup diced red peppers
1/2 cup fresh corn kernels
1/2 cup chopped scallions
1 egg white
4 T olive oil
1/2 lb goat cheese
Directions:
1. Add first five ingredients and form into balls with your hands
2. Use ring mold to form into cakes, compress
3. Put in shallow skillet over medium high heat, wait until oil sizzles then fry one side until crisp, flip and repeat.
4. If desired add a slice of cheese on top when you flip so it melts
