1. In a sauce pan, heat olive oil over med. heat. Add the onion, garlic, thyme and cook for 10 min. Add the tomatoes, chicken broth, lower heat and simmer for 15 min.
2. Using a blender puree the soup.
3. Butter 1 side of each bread. spread on unbuttered side mustard, top with a slice of cheese and other side of non buttered bread. grill sandwiches over med heat.
