Pasta with Spinach and Tomatoes

 

Ingredients:
1 pound rotini pasta
1/4 cup olive oil
1 clove garlic
9 oz spinach, roughly chopped
8 oz cherry tomatoes, halved
1 cup grated parmesan
Directions:
1. Boil large pot of salted water.  Cook pasta until tender.  Drain and reserve 1/2 cup of the cooking liquid.
2. Warm olive oil in large skillet over medium high heat.  Add garlic and cook until fragrant (about 2 minutes).  Add spinach and tomatoes and cook until the spinach is wilted.  Add pasta and toss.  Add cheese and cooking liquid along with salt and pepper to taste.  Stir to combine.
