Vegan Chili

This is truly on of the best chili's you'll ever taste. It's good for you and good for the animals!
Ingredients:

Step 1 - Saute veggies
2 cups chopped onion
1 cup carrots, chopped
1 yellow bell pepper, diced
1 orange bell pepper, chopped
4 cloves garlic, minced
1/4 cup olive oil

Step 2 - Add seasonings
2 tsp salt
1 jalepeno, seeded & chopped
1 tbs chili powder
1 tbs cumin

Step 3 - Add the rest
1 can diced spicy tomatoes
3 cans S&W Chile Beans w/ Chipotle Peppers
Directions:
1. Saute the first 5 ingredients in oil for 15 minutes or until veggies are soft.
2. Add the next 4 ingredients & cook for 5 more minutes.
3. Stir in the tomatoes and beans, including the juices. Simmer for 45 minutes.
4. Garnish with a dollup of non-dairy sour cream, sprinkle with chopped fresh cilantro and red onions.
