Grandma's Homemade Salami

My grandma made this salami every year for Christmas.  It was always a treat on "Candy Day" to have this as a snack.

Ingredients:
5 lbs. ground burger or venison
3 t. garlic salt
3 t. onion salt
4-1/2 t. mustard seed
5 heaping t. Tender Quick
4-1/2 t. cracked pepper
2 t. liquid smoke
Directions:
1. Mix all ingredients in a large bowl.

2. Divide in three parts and place in double plastic bags.
3. Place in fridge for 3 days to age.
4. Knead in bag once every day.
5. On third day, knead well and roll into 3 rolls.
6. Cook on broiler tray or rack at 150 degrees for 7-8 hours.  Don't overcook, they will dry out.
7. For smaller salamis, divide each bag of meat into 4 rolls.  Cook about 4 hours.
Notes:
I made smaller rolls for Christmas gifts and wrapped them in foil and tied the ends with curly ribbon for a festive look.
