Sauteed Chicken with Corn and Edamame

Ingredients:
4 oz bacon, sliced (short-way)
1 Tbsp olive oil
4 (6 oz) chicken breasts
3/4 tsp salt
1/2 tsp black pepper
1 lg red onion, sliced
2 cups frozen edamame, thawed
1 1/2 cups corn
Directions:
1. Heat oven to 400 degrees F.

2. Over medium heat, fry bacon. Set aside on plate lined with paper towel. Wipe skillet.

3. In skillet, heat oil over medium-high heat. Add chicken and season with 1/2 tsp salt and 1/4 tsp pepper. Cook until golden brown, about 3 mins per side.
4. Transfer chicken to a baking dish and roast until cooked through, about 8 mins.
5. Meanwhile, add onion to skillet and saute until soft. Add edamame and corn and heat through. Add bacon pieces and stir in remaining salt and pepper.
6. Spoon the vegetables over the chicken and serve.
Notes:
For less fat, leave out the bacon. It is still tasty without it!
