Oatmeal Chocolate Cookies

Healthy Eating
Ingredients:
6 tbsp unsalted butter
3/4 cup packed light brown suger
1/3 cup all-purpose flour
1/3 cup whole wheat flour
3/4 tsp. baking soda
1 1/2 cups regular oats
1/2 tsp salt
1 egg lightly beaten
1 tsp vanilla extract
3 oz coarsely chopped bittersweet chocolate
Directions:
1. Preheat oven to 350 degrees

2. Melt butter in small saucepan over low heat.  Remove from heat and add brown sugar.  Stir until smooth.
3. In medium bowl, combine flours, oats and salt.  Combine the butter mixture with the dry ingredients, and add egg and  vanilla.
4. Fold in chocolate.  Mix well and spoon mixture by tablespoon fulls onto lightly greased baking sheets. 
5. Bake for 12 minutes, until tops are dry to the touch.
