Vegetarian (Vegan) Lentil Salad

This is a delicious, healthy, and hearty side dish. I tried it out on my boyfriend last week and he loved it! It uses two Super Foods: walnuts & lentils
Ingredients:
1 1/2 cup dried lentils
4 green onions, finely chopped
1/4 cup walnuts, finely chopped
1 tbs olive oil
3/4 tsp salt (or soy sauce)
1/2 tsp thyme
1/4 tsp pepper
3 tbs balsamic vinegar
2 tbs fresh herb (ex: parsley, cilantro)
Directions:
1. Cook lentils according to the package directions (you can skip the soaking step, I did!).
2. Bake walnuts in 325 degree oven for 1-5 minutes. Watch them closely. You want them toasted, not overly browned or burnt.
3. Combine all but walnuts & refrigerate for 1 hour.
4. Serve as is or over lettuce if you like. Top with the walnuts. You can also top with Feta cheese if you are not a vegan.
Notes:
You can process the nuts in a food processor to speed up preparation.

I used cilantro for the fresh herb and it was yummy!
