Tomato Sauce

         
Ingredients:
1 tabl olive oil
1 1/2 cups chopped onion
1 teas dried oregano
4 cloves garlic, minced
1/2 cup dry red wine
1 teas dried oregano
1/2 teas salt
1/4 teas pepper
2 (28-oz) cans whole plum tomatoes, undrained and chopped
1 (6-oz) can tomato paste
2 bay leaves
Directions:
1. Heat oil in a large saucepan over medium-high heat.  Add onion, oregano, and garlic; cook 5 minutes or until vegetables are tender, stirring occasionally.
2. Add wine and remaining ingredients, and bring to a boil.  Reduce heat, and simmer for 30 minutes.  Remove bay leaves.
3. This sauce will freeze well for up to 3 months.  Place it in an airtight container or zip-top plastic bag and freeze.

Makes 8 cups, serving size 1 cup
