Santa Babies

Mini cocoa cakes with various added flavors and toppings.
Ingredients:

Cocoa Cakes
1/2 cup butter
3 eggs
1/2 cup sour cream
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1/2 teaspoon vanilla
Light color corn syrup

Flavorings
1. Orange Extract
2. Peanut Butter
3. Coconut Extract
4. Peppermint Extract
5. Minced Peanut Brittle
6. Grated Orange Peel
7. Apricot Brandy
8. Mini Chocolate Pieces
9. Cherry Liqueur
10. Ground Cinnamon
11. Raspberry Liqueur
12. Flavored Honey

Toppings
1. Fig, halved
2. Red Candied Peanuts
3. Cream Cheese Frosting and Pecan Halves
4. Cream Cheese Frosting and Crushed Peppermint
5. Peanut Brittle
6. Baked Orange Peel coated in Sugar
7. Dried Apricots
8. Shredded Coconut and one Hershey's Kiss
9. Maraschino Cherry
10. Cream Cheese Frosting and Cinnamon Red Hots
11. Jellied Fruit Candies
12. Apricot Slice
Directions:
1. Allow butter, eggs and sour cream to stand at room temperature 30 mintues.  Meanwhile, lightly grease 48 1 3/4" muffin cups; set pans aside.  In medium bowl stir together flour, cocoa powder, baking powder, baking soda and salt.  Set aside.

2. Preheat oven to 325 degrees.  In a large mixing bowl beat butter with electric mixer on medium speed 30 seconds.  Add sugar, beating 7 minutes or until fluffy.  Beat in vanilla.
3. Add eggs, 1 at a time, beating 1 minute after each and scraping bowl.  Alternately add flour mixture and sour cream to butter mixture, beating on medium speed after each addition until combined. 
4. Fill each cup with about 1 tablespoon batter.  Using a wooden pick, stir desired flavor into each cup. 
5. Bake 15 minutes or until tops spring back when touched.  Cool on rack 10 minutes.  Remove from pan.  Brush with corn syrup.  Add desired toppers.  Serve immediately or stor in an airtight container in refrigerator up to 2 days.  Makes 48.
