Kale Chips

Light and crunchy "chips" that are practically guilt free. 
Ingredients:
1 Tbsp apple cider vinegar
2 Tbsp salt
3 Tbsp olive oil
2 bunches kale, rinsed with stems removed
Directions:
1. Cut kale into 2 to 3 inch pieces.
2. Mix vinegar, oil and salt in a large bowl then add kale and mix by hand, being sure all leaves are covered with the mixture.
3. Place on baking sheets (use parchment paper for easy clean-up) and bake at 350 degrees until they are crispy

4. After about 20 minutes, if it looks like they are not sizzling a bit or getting a little crispy, turn up the heat to 400 degrees. 

Time for baking varies depending on the size of your chips and desired crispness. 

The outer edges cook more quickly than the pieces from near the stem.
Notes:
Reviews all said these are delicious, but messy and not pretty to look at. 

Good for leftover kale from Zuppa Toscana.

Reviews also said to reduce the salt in the recipe.
