Rhubarb Pie

I love this served - warm - with vanilla ice cream.  The perfect summer treat!
Ingredients:
1 C rhubarb (cut fine)
1 C sugar
1/4 tsp salt
3 eggs (beaten)
1 T flour
1 tsp vanilla
Unbaked pie crust
Directions:
1. Beat eggs until thick and lemon-colored.
2. Add sugar gradually while beating.
3. Add flour, salt, vanilla, and rhubarb.
4. Pour into pie crust and bake at 325* for 1 hour.
