Babushka's Apple Cake

My Russian grandmother used to make this scrumptious apple (or rhubarb, on occasion) cake when I was little. It's very light and fluffy (and fun to make with kids!)
Ingredients
Crust
1 stick unsalted butter
3/4 cup graham cracker crumbs
Filling
4 apples (peeled, cored, & sliced)
4 eggs, separated
1 1/2 cups sugar
1 tbsp vanilla extract
1 tsp baking soda
Topping
4 egg whites
6 tbsp sugar
 
Directions
1. Preheat oven to 300 degrees.
2. Prepare cake crust by spread butter all over bottom and sides of a glass 9" x 13" baking pan.  Sprinkle graham cracker crumbs over butter to form a crust.
3. Beat together 4 egg yolks and 3/4 cup sugar.  In a separate bowl, beat together 4 egg whites and remaining 3/4 cup sugar. Fold together the two mixtures.
4. Mix in vanilla extract and baking soda.
5. Place apple slices evenly in graham cracker encrusted pan.  Pour filling in over apples.
6. Bake for approximately 30 minutes, or until toothpick comes out clean.
7. To make topping, whisk together egg whites and sugar.  Pour topping over baked cake and bake for 15 more minutes.
 
Notes:
Can be made with rhubarb instead of apples.
