Everything Cookies

These whole-wheat cookies are my own (fairly healthy!) creation and appeal to everyone with their variety of ingredients and super soft and chewy centers!
1 stick unsalted butter
1 cup unsweetened applesauce
1 cup firmly packed light brown sugar
1/3 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup all-purpose flour
1 cup whole grain flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 package vanilla pudding mix
2 cups instant oatmeal
1 1/2 cups chocolate chips
1/2 cup chopped walnuts
1. Heat oven to 350 degrees.
2. Beat together butter, applesauce, and sugars until creamy.
3. Add eggs and vanilla.  Beat well.
4. Add combined flours, baking soda, cinnamon, salt, and pudding mix.  Beat well.
5. Stir in oats, chocolate chips, and walnuts.
6. Drop by rounded tablespoonfulls onto ungreased cookie sheet.
7. Bake 12-13 minutes until golden around the edges.
Makes 2 dozen.
