Cake Balls, Pops and Oreo Truffles

Cake balls or pops are bite size balls made of crumbled cake mixed with frosting and covered in chocolate or candy coating.  They are easy to make and can be decorated for a variety of holidays or occasions.

Ingredients
CAKE BALLS
1 box cake mix (cook as directed on box for 13 X 9 cake)
1 can (16 oz.) cream cheese frosting
1 package chocolate bark
wax paper
CAKE POPS (4 dozen)
1 box cake mix
1 container (16-0z.) ready made frosting
32 ounces ( 2 pounds) candy coating
lollipop sticks
 
Directions
1. After cake is cooked and cooled completely, crumble into large bowl.
2.  Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)
4. Chill for several hours. (You can speed this up by putting in the freezer.)
5. Melt chocolate in microwave per directions on package.
Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.)

I also only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. It's easier to work with when it's hot.
6. OREO TRUFFLES
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg.  (1 lb. 2 oz.) OREO Cookies, finely crushed (about 4-1/4 cups), divided
2 pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate, melted
MIX cream cheese and 3 cups cookie crumbs until well blended.
SHAPE into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs.
REFRIGERATE 1 hour or until firm. Store in tightly covered container in refrigerator.
 
Use a small cookie cutter to push the mixture through for  heart shaped truffles. Also, it helps to freeze the uncoated balls for a few minutes to keep the mixture from starting to fall apart in the melted chocolate. If this becomes a problem, dip them in the chocolate, let dry and then dip again. They are also good dipped in regular milk chocolate bark.


 
Notes:
How to Melt Chocolate
Place unwrapped chocolate squares in microwaveable bowl. Microwave on HIGH 2-1/2 min. or until chocolate is completely melted, stirring every 30 sec.
How to Easily Dip Truffles
To easily coat truffles with the melted chocolate, add truffles, in batches, to bowl of melted chocolate. Use 2 forks to roll truffles in chocolate until evenly coated. Remove truffles with forks, letting excess chocolate drip back into bowl. Place truffles on prepared baking sheet; let stand until firm.
