Easiest and Healthier Pasta Sauce

Most supermarket sauces are loaded with salt  Just a few ingredients and very little technique can replace them with a much healthier choice.

Basic Sauce  (very simple)

1 28 oz. can crushed tomatoes 
scant Tablespoon Italian seasoning

Bring to a boil, then reduce the heat and let simmer for as long as it takes to make the pasta.  Taste the sauce for salt, then toss it with your pasta and add on some good Parmesan cheese.
NOTE: You can use whole, canned Italian tomatoes, but you will need to chop them or run them through the food processor.

Directions
1. VARIATIONS :  add to Basic Sauce any of the following

I. Puttanesca  style - Add to basic sauce a few tablespoons of jarred tapenade along with some crushed red pepper flakes and minced parsley.

II.  ANCHOVY -  mince more or less equal parts garlic, anchovy fillets and parsley so you have a little pile on your cutting board about the size of a golf ball.  Saute it over medium heat in a tablespoon or so of olive oil for a minute, until it starts to brown, then add your crushed tomatoes and simmer while your pasta cooks, season with salt to taste.

III.  Meat Sauce - Brown ground beef or sausage in a saute pan.  Proceed as with Basic sauce. If desired, you could take the meat from the pan, and add half diced onion and / or diced green pepper and/ or a crushed garlic clove.   When the vegetables are soft or a little brown, add the meat back, and  add in the Basic Sauce.
