Falafel Mix

Ingredients:
1 quart dry chickpeas, (soak in 2 quarts water +1/2 tsp baking soda, overnight)

Day 2  Ingredients
Spanish Onion - ½ cup
Peeled Garlic - 2 Cloves
Cilantro - ½ lb
Parsley - ½ lb
Celery - 2 stalks
½ of a Leek
Kosher Salt - ¼ cup
Ground Black Pepper - 2 tsp
Ground Coriander - ¼ cup
Allspice Ground - 1 pinch
Ground Cumin - 2 Tbsp
Baking Powder - ¼ tsp
Baking Soda - ¼ tsp
Flour Chickpea 1/3 cup
Directions

Drain the chickpeas

Cut the stems of the herbs and rinse if needed.

Slice the leeks into quarters lengthwise and soak in water

Place the chickpeas, herbs, leeks, and celery in a salad spinner.

 Rough chop all the dry vegetables along with the onion and garlic.

Run this mix through a grinder with the smallest attachment you can find, two times.
Combine the spices and flour.
Mix the flour-spice mixture into the ground chickpeas

Using small cookie/ice cream scoop, drop batter into 350 degree heated cooking oil. Fry until golden, remove from  pan and drain on paper towels.

Serve with  SPICY YOGURT SAUCE:
1 (6-oz.) container plain yogurt
1 clove garlic, grated
1 teaspoon fresh lemon juice
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
