Peanut Butter Filled Chocolate Chookies

Bake at 375 for 7-9 minutes
Yields about 18 cookies
Ingredients
Cookie Dough
1 1/2 c Flour
1/2 c Unsweetened Cocoa
1/2 t Baking Soda
1/2 c Sugar
1/2 c Firmly Packed Brown Sugar
1/2 c Butter, softened
1/4 c Peanut Butter
1 t Vanilla Extract
2 Eggs
Cookie Filling
3/4 c Peanut Butter
3/4 c Confectioners Sugar
 
Directions
1. In a small bowl, combine flour, cocoa and baking soda
2. Blend well
3. In a large bowl, beat sugar, brown sugar, butter and 1/4 cup peanut butter until light and fluffy
4. Add vanilla extract and eggs
5. Beat well
6. Stir in flour mixture until blended and set aside
7. In a small bowl, combine filling ingredients
8. Blend well
9. Roll into one-inch balls
10. For each cookie, with floured hands, shape about 1 tablespoon cookie dough around one peanut butter ball, completely covering
11. Place 2 inches apart on ungreased cookie sheet
12. Flatten slightly, as the cookies don't really spread
13. Bake at 375 degrees for 7-9 minutes or until set and slightly cracked
14. Cool on wire racks
