Cranberry BBQ Chicken (OAMC)

A nice change from your usual barbecued chicken. Sweet, tangy, and tasty.
3 boneless skinless chicken breasts
1/4 cup diced onion
1/8 cup diced celery
1/2 cup cranberry sauce
1/4 cup ketchup
1/2 tablespoon brown sugar
1 tablespoon lemon juice
1/2 tablespoon Worcestershire sauce
1/2 tablespoon yellow mustard
1/2 tablespoon apple cider vinegar

2. Do not open chicken.  Set aside.
3. In a gallon-size freezer bag combine the onion, celery, cranberry sauce, ketchup, brown sugar, lemon juice, Worcestershire sauce, mustard, and vinegar.  Seal securely.  Set aside.
4. Insert chicken and sauce bag into a gallon-size ziploc freezer bag and seal.  With a sharpie marker, label the outside of the bag "Cranberry BBQ Chicken".

7. Thaw completely in refrigerator.
8. Preheat oven to 325 degrees F. In a small non-stick saucepan, bring contents of cranberry bbq sauce bag to a boil stirring constantly.  Spray the bottom of a 8 x 8 baking dish with non-stick cooking spray and arrange chicken in dish and sprinkle with salt and pepper.
9. Spoon sauce over chicken and bake uncovered for 30 minutes and juices run clear or until done.  Baste chicken with sauce ever 10 to 15 minutes during cooking.
10. Makes 3 servings.  This recipe can be doubled for 6 servings.
11. Serving suggestions: Rice pilaf and steamed carrots.
For best results in quality and packaging, expel as much air from the baggies as possible.
