Creamed Green Beans

  • Currently 4/5
I have to admit, I am not a big fan of green beans. Growing up, Mom always made them creamed. These I would eat readily. What isn't good in a rich cream sauce?
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1 cup milk
fresh ground nutmeg, to taste
1 can green beans, drained

In a small, heavy saucepan, melt 2 tablespoons of butter over low heat.

2. Blend the flour into the melted butter.
3. Add salt.
4. Cook over low heat, stirring, for 4 to 5 minutes.

5. Add the milk all at once and cook, stirring constantly, until smooth and thickened.  Add ground nutmeg to suite your taste.
6. Add green beans and heat through.
7. Serves 4.
