Deviled Eggs (Eggs Mimosa)

 Preparation: Egg yolk mixture can be prepared in advance.  Do not fill egg halves until just prior to service.

12 small hard-boiled eggs
6 tablespoons mayonnaise
2 tablespoon sugar
2 teaspoon prepared yellow mustard
2 teaspoon vinegar
salt, to taste
pepper, to taste
paprika (optional)
chives, finely chopped (optional)
1. Peel shells off cooled hard-boiled eggs and slice into halves lengthwise.
2. Mash yolks with a fork, and add remaining ingredients.
3. Spoon or pipe mixture into wells of the egg white halves. Garnish with a light sprinkling of paprika or chives.
4. Chill before serving.
5. Makes 24 servings.
