  • Currently 4/5
These cookies are like soft gingersnaps.
3/4 cup butter, melted
1 1/2 cups sugar, divided use
1 egg
1 teaspoon vanilla
1/4 cup blackstrap molasses
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1. Mix together the flour, salt, and spices and set aside.
2. Beat the butter into 1 cup sugar, vanilla, and egg until smooth. Beat in the molasses.  Slowly add the flour mixture and stir until just combined. Cover with wax paper and refrigerate for at least an hour.
3. Preheat the oven to 375F.
4. Shape the dough into balls about the size of walnuts, roll in the remaining 1/2 cup sugar and place on an ungreased cookie sheet at least two inches apart.
5. Bake for 8-10 minutes, the tops should crack before they are removed from the oven. Carefully remove from the baking sheet to a wire rack to cool.
