Balsamic Chicken Stack

1/2 c. Balsamic Vinegar
1 Tbsp. Oregano
2 Tbsp. Brown sugar
Cracked Black Pepper
2 Chicken Breast Fillets, halved lengthways
1 Tomato, sliced
1 Large fresh Mozzerella, halved
1/3 c. Basil leaves
Olive oil, for drizzling
1. Place vinegar, oregano, sugar and pepper in a medium non-stick frying pan over medium heat and cook for 3-4 minutes or until the liquid has thickened slightly.
2. Add chicken and cook for three minutes each side. Place chicken on serving plates. Divide tomatoes, mozzarella, and basil between the plates. Drizzle with olive oil and serve.
