1. Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat. Blend olive oil and garlic in small bowl. Brush tomato lightly with oil. Place tomato on grill. Grill, covered, 2 to 3 minutes per side to lightly char. Remove to platter; leave grill on.
2. Brush pizza crust with remaining oil mixture. Sprinkle with 1/2 cup cheese and 2 tablespoons basil. Top with grilled tomato slices. Sprinkle with remaining mozzarella and Parmesan.
3. Place pizza directly on grill (or on sheet of heavy duty foil lightly sprayed with nonstick cooking spray). Grill, covered, 7 to 9 minutes or until bottom of crust is evenly browned, topping is hot, and cheese is melted, rotating once if necessary to cook crust evenly. Remove grom grill. Sprinkle with remaining 1 tablespoon basil. Serve with additional Parmesan cheese and crushed red pepper flakes, if desired.
