Rhubarb Cake

Ingredients
1 1/2 cup brown sugar
1/2 cup shortening
1 egg
1 cup buttermilk
1 tsp baking soda
1 tsp vanilla
2 cups sifted flour
1 cap rhubarb, finely chopped
topping:
1/2 cup sugar
1 tsp cinnamon
 
Directions
1. Cream together the shortening and brown sugar.
2. Beat in the egg and vanilla.
3. Combine the baking soda and buttermilk in a separate bowl.
4. Alternately add flour and buttermilk/soda mixture to creamed mixture.
5. Stir in the rhubarb.
6. Spread in a 9x13 pan.
7. Sprinkle with combined mixture of 1/2 cup sugar and 1 tsp cinnamon.
8. Bake at 325 degrees for 1 hour.
