Spinach Roll Up

Ingredients
1 pkg Frozen Spinach Block
2 large Eggs
1 lb Sausage
1 c Mozarella Cheese
1/4-1/2 c Fresh Parmesian, Grated
1/8-1/4 c Milk
1 pkg Puff Pastry Dough
 
Directions
1. Brown sausage

2. Boil spinach till all thawed (doesn't take long).
3. Drain spinach, being sure to remove as much water as possible (it'll taste disgusting otherwise).

4. In the pot with the drained spinach over low heat, add the eggs and milk, stirring continuously until eggs are cooked and very little moisture is left.
5. Add salt and pepper and cheese, stirring continuously.
6. Add sausage.

7. Take 1 pkg. Puff pastry dough and spread to fill a 9x15 pan.
8. Spread spinach mixture over dough and roll up
9. Cook at temperature on dough box for ~8 minutes.
 
Notes:
Puff Pastry Dough Substitutions:
* Biscuit Dough
* Crescent rolls, either in a ring or in individual ones that you cook in muffin tins
