Caramel-Filled Chocolate Cookies

Chocolate cookie dough wrapped around caramels - Yum!
1 Cup Butter, softened
1 Cup sugar
1 Cup Brown sugar, firmly packed
2 Eggs
2 t Vanilla
2-1/4 Cups flour
1 t Baking soda
3/4 Cup Cocoa powder
1 Cup Walnuts, chopped and divided
1 T Sugar
48 Rolos (or other chocolate-covered caramels)
1. Beat butter until creamy.  Gradually beat in sugars.  Beat in eggs and vanilla.  Combine flour, baking soda and cocoa.  Gradually add to butter mixture, beating well.  Stir in 1/2 cup walnuts.  Cover and chill at least 2 hours.

Preheat oven to 375.

Combine remaining 1/2 cup walnuts with the 1T sugar.  Press dough around a Rolo.  Dip the tops into the sugar mixture.  Place sugar side up, 2 inches apart on greased (or parchment lined) baking sheets.

Bake for 8 minutes.  Let cool for 3-4 minutes on baking sheets before removing to wire racks to cool completely.
