Frozen Pineapple Salad

Sweet fruit salad that goes great with that Christmas Ham!
1 Can (12 oz) evaporated milk, refrigerated 24 hours
1 Can (20 oz) crushed pineapple
1/2 Cups sugar
1 pkg. lemon jello
1 pkg (3 oz) cream cheese, softened
1 Cup mini marshmallows
1. Put sugar, pineapple (including juice) and jello into a saucepan and boil 3-1/2 - 5 minutes. 


Beat evaporated milk until foamy and thick.  Add cream cheese and beat well.  Fold the milk/cheese mixture into the chilled pineapple mixture.  Then fold in marshmallows.

Pour into 13 x 9 Pyrex dish; cover with foil and freeze.  Cut into squares to serve.  Garnish with a maraschino cherry and walnuts, if desired.
My husband doesn't think this really qualifies as a salad, but I grew up with it being served as a salad on Christmas.  (No plain old tossed salads for Christmas in my house - not then....not now!)
