Lemon Chicken Recipe #1

This is my friend Valeska's recipe.
2 eggs, beaten
1 cup seasoned bread crumbs
1/4 cup oil
chicken tenders
2 Tablespoons butter
2 Tablespoons flour
1/4 teaspoon salt and pepper
3/4 cup chicken broth
2/3 cup white cooking wine
1/4 cup lemon juice
1. Dip chicken in eggs and then bread crumbs.  Pan fry in oil on medium about 3 minutes each side or until chicken is done.  Remove chicken and put in oven to keep warm.

Clean pan of excess oil and drippings.

In pan, melt butter; add flour, salt and pepper.  Gradually add broth, wine and lemon juice.  Stir until thickened and then add back the chicken.

Serve on top of cooked spinach. (that part is my addition to the recipe)

I have 2 lemon chicken recipes that I make.  My husband prefers one and I prefer the other, but we can never remember which one we like better.  They're both good!
