Red Velvet Cake

1/2 Cup Shortening
1-1/2 Cup Sugar
2 Eggs
2 1-oz bottles Red food coloring
1 teaspoon Vanilla
2-1/2 Cups Sifted Cake flour
1/2 teaspoon Salt
2 teaspoons Cocoa
1 Cup Buttermilk
1 Tablespoon White vinegar
1 teaspoon Baking soda
1. Beat shortening at medium speed until fluffy; gradually add sugar, beating well.  Add eggs, 1 at a time.  Stir in food coloring and vanilla, blending well.
2. Combine flour, salt and cocoa - set aside.
3. Combine buttermilk, vinegar and soda (mixture will bubble).  Set aside.
4. Add flour mixture to shortening mixture, alternating with buttermilk mixture, beginning and ending with the flour mixture.  After all has been blended in, beat at medium speed 2 minutes.
5. Pour batter into 3 greased and floured 8" round cake pans.
6. Bake at 350 for 25 minutes.  Cool in pans 10 minutes.  Then remove from pans and cool completely on wire racks.
7. Once cooled, frost with Cream cheese frosting.
To make it look extra pretty at Christmas, just frost in between the layers, not the sides.
I make Cream Cheese Frosting to use on this cake.
