UFO Cookies

Shortbread cookies sandwiched together with chocolate and rolled in holiday decors.
Ingredients
Cookies
1 Cup Butter, softened
1/2 Cup Confectioner's sugar
1 teaspoon Almond extract *
2 Cups Flour
Chocolate Filling
1/2 Cup Chocolate chips
2 Tablespoons Milk
2 Tablespoons Butter
1 Cup + 2 Tablespoons Confectioner's sugar, sifted
1/2 teaspoon Almond extract *
 
Directions
1. Beat butter, sugar and almond extract 2 minutes or until creamy. 
2. Reduce speed to low and gradually beat in flour.
3. Roll dough into 1/2-inch balls and place balls on ungreased cookie sheet.
4. Bake 12-14 minutes - just until golden. 
5. Cool.
6. In small saucepan, combine chocolate, milk and butter.
7. Cook over low heat until chocolate melts.
8. Remove from heat and stir in sugar until well mixed.
9. Add almond extract.
10. Spread 1/2 teaspoon filling on 1 cookie - put another cookie on top.
11. Gently roll in candy decors.
 
Notes:
*  Can also use peppermint extract and roll in crushed candy canes.
