Quick Beef Enchiladas

Makes 12 enchiladas. I know there are much better homemade recipes out there for enchiladas, but time is of the essence with this one.
1 can enchilada sauce (about 19 oz.)
6 oz. Cheddar or Mexican-blend cheese, whatever you prefer
1 lb. ground beef
12 corn tortillas
1. Brown ground beef in a skillet; drain fat. Mix 3/4 cup enchilada sauce and about 1 cup of cheese with the meat in the pan.
2. Lightly grease a 9" x 13" glass baking pan. Fill corn tortillas with beef mixture and roll them up; place them fold-side down in the baking pan. Pour the rest of the sauce over the tortillas. Sprinkle the remaining cheese over the tortillas.
3. Bake at 375 degrees for 15-20 minutes.
When dealing with corn tortillas, I HIGHLY recommend heating them for about 30 seconds on High power in the microwave before filling them. This makes them a little more floppy and not as crumbly and will significantly make the filling process easier.

I used 85%/15% ground beef for this recipe. Ground turkey, shredded chicken, etc. can be added instead of beef.

Serve these with Spanish rice and refried beans to round out the meal. Ole!
