Carrot and Ginger Soup

Packed with healthy fresh vegetables and warming, very simple and just a few simple ingedients
1 1/2 tbsp Olive Oil
800 Grms Fresh Carrots
1 Large Onion
50 grams Root Ginger
Pepper to taste
900 mls Vegetable Stock
1. Peel and chop carrots
2. Finely chop onion
3. Finely chop ginger
4. Grab a large saucepan
5. Put it on your hob and add oil
Once oil is hot add onion and ginger gently cook them for 2-3 minuites till the onion is soft
6. Add your carrots and pour in stock.
Bring to the boil then place lid on pan and simmer for around 25 to 30 minuits.
7. Puree in a blender or with hand blender i thien like to sieve to make nice and smoothe but thats optional. Add pepper to taste
8. Serve and enjoy
